Blackberry Pork Chops
Ingredients
- 1 ½ lb (¾-inch-thick) boneless pork top loin chops
- 2 teaspoons steak seasoning
- Olive oil cooking spray
- ¼ cup blackberry preserves
- 1 tablespoon soy sauce
- 1 teaspoon lemon juice
- 1 cup fresh blackberries (optional for serving)
Steps
- Preheat grill (or grill pan) on medium-high. Sprinkle both sides of pork with seasoning and coat with spray; place on grill (wash hands). Close lid (or cover loosely with foil). Grill 4–5 minutes on each side until pork is grill-marked and 145°F.
- Meanwhile, combine preserves, soy sauce, and lemon juice in small saucepan on medium. Bring just to a boil, stirring occasionally, then cover and remove from heat. Ladle sauce over pork chops; garnish with blackberries, if using. Serve.
Green Beans
Ingredients
- 1 (12 oz) bag trimmed fresh green beans
- 1 (14.5 oz) can chicken broth
- 1 tablespoon cooked bacon pieces
- ½ teaspoon steak seasoning
Steps
- Combine all ingredients in medium saucepan on medium-high; cover and bring to a boil.
- Reduce heat to medium; cook 10–15 minutes, stirring occasionally, until beans are desired tenderness. Serve.
Horseradish Mashed Potatoes
Ingredients
- 1 (24 oz) package refrigerated mashed potatoes
- 2 tablespoons sour cream
- 1 tablespoon salted butter
- 1 tablespoon prepared horseradish
Steps
- Place potatoes in microwave-safe bowl; cover and microwave on HIGH 3 minutes, stirring halfway through cook time.
- Stir in remaining ingredients. Microwave 3 more minutes on HIGH, stirring halfway through cook time, or until thoroughly heated. Stir and serve.
Serving Suggestions
- Complete your meal with fresh salad blend, garlic bread sticks, and Boston cream pie for dessert.
