Ingredients

  • 1 (15.25 oz) can black beans
  • ½ seedless cucumber
  • 1 cup diced fresh tomatoes
  • ½ cup matchstick carrots
  • ½ cup shredded Mexican-style cheese blend
  • ½ cup light olive oil vinaigrette

Steps

    1. Drain and rinse beans, then place in large bowl. Chop cucumber into bite-size pieces and add to bowl.
    2. Stir in remaining ingredients. Cover and chill until ready to serve.
