Bisquick Strawberry Shortcake

Ingredients

  • Nonstick canola oil spray
  • 2 cups Bisquick Original Pancake and Baking Mix
  • 6 tablespoons sugar, divided
  • 1 ½ teaspoons fine sea salt, divided
  • 5 tablespoons shortening
  • ⅔ cup heavy whipping cream
  • 1 cup buttermilk
  • 1 cup flour, for dusting
  • 2 tablespoons unsalted butter
  • 16 oz fresh strawberries
  • 1 tablespoon vanilla extract
  • 3 tablespoons maple syrup
  • 1 (14 oz) canister refrigerated whipped heavy cream

Steps

    1. Preheat oven to 425°F. Coat 9-inch cake pan with spray. Combine in large bowl: Bisquick Baking Mix, 2 tablespoons sugar, and ½ teaspoon salt until blended. Add shortening to bowl and mix, using two forks, until pea-size crumbs form. Stir in cream and buttermilk until just blended and dough forms.
    2. Add flour to shallow dish. Evenly scoop and roll dough into 12 (2-inch) dough balls; dredge each dough ball in flour (shake off excess) and flatten slightly on floured work surface. Arrange each flattened round in prepared pan in single layer (should be a tight fit). Bake 20–22 minutes, until lightly browned.
    3. Meanwhile, melt butter. Remove pan from oven and brush tops with melted butter. Invert pan and transfer biscuits to wire rack; cool before separating.
    4. Hull and thinly slice strawberries. Combine in medium bowl: sliced strawberries, remaining 4 tablespoons sugar, remaining 1 teaspoon salt, vanilla extract, and maple syrup. Stir to combine and set aside at room temperature while biscuits cool (stir strawberries occasionally).
    5. To serve, split biscuits in half lengthwise and place bottom in a shallow bowl. Top bottom halves of biscuits with macerated berries and liquid. Place biscuit top over berries; garnish with whipped topping and serve immediately.
