Bingsu (Korean-Style Coconut-Mango Shaved Ice)

Ingredients

  • 1 fresh mango (or 2 cups diced frozen mango)
  • ¼ cup coconut cashews
  • ½ cup sweetened coconut flakes
  • 2 cups small ice cubes
  • ½ cup coconut gelato (or vanilla ice cream)
  • 2 tablespoons water
  • ¼ cup strawberry (or raspberry) syrup
  • ¼ cup sweetened condensed milk
  • 2 tablespoons date syrup (or chamoy sauce)

Steps

    1. Cut sides of mango away from pit, scoop out flesh, and chop finely (2 cups). Chop cashews coarsely; toast coconut if desired.
    2. Place ice cubes, gelato, and 2 tablespoons water in food processor bowl (or high-speed blender); pulse until ice is finely chopped.
    3. Scoop mixture into 2 bowls and form into volcano shapes. Sprinkle mango around shaved ice; drizzle evenly with strawberry sauce, condensed milk, and date syrup. Sprinkle with cashews and coconut. Serve immediately.

    Chef's Tip: Finely grate frozen fruit on top of shaved ice for a sweet and colorful topping.
