Berry Cinnamon Roll Pizza

Ingredients

  • Aluminum foil
  • 3 cups fresh mixed berries (such as blueberries, raspberries, blackberries)
  • 2 tablespoons cinnamon sugar, divided
  • 1 (8-ct, 13-oz) can flaky cinnamon rolls with icing
  • 1 cup low-sugar granola

Steps

    1. Preheat oven to 400°F. Line baking sheet with foil. Toss berries with 1 ½ tablespoons cinnamon sugar. Open can of rolls (do not separate rolls). Unroll entire dough on baking sheet and press edges of rolls together to form a crust about 13- x 9-inches. Sprinkle berry mixture over crust; bake 6–7 minutes or until edges are golden.
    2. Top with granola; bake 5 more minutes or until center is cooked and golden. Let stand 2–3 minutes to cool.
    3. Place icing (from cinnamon rolls) in microwave-safe dish; microwave on MEDIUM (50% power) for 20–30 seconds or until thin and pourable. Drizzle pizza with icing; sprinkle with remaining ½ tablespoon cinnamon sugar. Slice and serve.
    Tip: This recipe was developed using "flaky" cinnamon roll dough, which will unroll. Other types of cinnamon rolls will work, but take more effort to form into a crust. Press the rolls together and cut lengthwise through the middle (like opening a book); then press out into a 13- x 9-inch rectangle.
