Beer Cheese Soup

Ingredients

  • 1 lb Publix Deli Imported Aged Cheddar Cheese
  • 6 tablespoons unsalted butter
  • 8 oz trinity mix (diced fresh onions, bell peppers, and celery)
  • 2 teaspoons seafood (or creole) seasoning
  • 6 tablespoons flour
  • 24 oz lager beer
  • 4 cups half-and-half (or whole milk)

Steps

    1. Shred cheese. Preheat large stockpot on medium 2–3 minutes. Add butter, then add trinity mix and seasoning. Cook 3–4 minutes, stirring occasionally, until tender.
    2. Sprinkle flour over mix; stir until absorbed. Add beer and bring to a simmer, whisking occasionally.
    3. Reduce heat to low, add half-and-half, and simmer 10 minutes, stirring occasionally. Add cheese and whisk until melted.
Other Preparation Methods
    • Appetizer: Slice and serve with other Deli gourmet cheeses, salami, pepperoni, crackers, and olives.
    • Garnish: Shred cheddar and use to top mashed or baked potatoes.
