Beef and Bean Chili

Ingredients

  • 1 large sweet onion
  • 2 fresh jalapeño peppers
  • 6 cloves garlic
  • 2 tablespoons canola oil
  • 2 lb ground beef
  • 1 ½ teaspoons kosher salt
  • 1 (3.65 oz) box Texas chili seasoning kit
  • 2 (16 oz) cans pinto beans in mild chili sauce
  • 1 (14.5 oz) can diced fire-roasted tomatoes with green chilies
  • 2 ⅓ cups water, divided
  • 1 bunch green onions
  • 1 (8 oz) bag shredded cheddar cheese
  • ½ cup Mexican-style crema (or sour cream)
  • 1 (15 oz) Bakery homestyle cornbread (optional)

Steps

    1. Chop onion, garlic, and jalapeño (discard membranes and seeds if desired) coarsely.
    2. Preheat large stockpot (or Dutch oven) on medium-high 4–5 minutes. Place oil, beef, and salt in pan. Brown 8–10 minutes, stirring to crumble meat, until no pink remains. Stir in onions and jalapeños; cook 4–5 minutes, stirring occasionally, until onions begin to soften.
    3. Stir in garlic and seasoning packet from chili kit (include cayenne packet for spicy chili); cook and stir 1 minute. Stir in beans (do not drain), tomatoes with green chilies (do not drain), and 2 cups water; bring to a simmer, then reduce heat to low, cover, and cook 45 minutes, stirring occasionally.
    4. Meanwhile slice green onions thinly (1 cup). Combine corn masa packet from chili kit and remaining ⅓ cup water, whisk to blend. Stir mixture into chili and simmer 5 minutes until slightly thickened. Stir in ½ cup green onions.
    5. Divide chili among serving bowls; top each with cheese, crema, and remaining green onions. Serve with cornbread, if using.
