Barbecue Meatloaf

Ingredients

  • Cooking spray
  • ¼ cup diced pimientos
  • ¼ cup Italian-style bread crumbs
  • ¼ cup diced fresh yellow onions
  • 1 large egg (or ¼ cup egg substitute)
  • 2 teaspoons barbecue (or mesquite) seasoning
  • ½ cup barbecue sauce, divided
  • 1 ½ lb ground beef

Steps

    1. Preheat oven to 375°F. Coat 9- x 4-inch loaf pan with spray; drain pimientos.
    2. Place in medium bowl: pimientos, bread crumbs, onions, egg, seasoning, and ¼ cup sauce; stir until evenly combined. Add beef and mix just until combined (do not over-mix). Shape into loaf and place in pan (wash hands). Bake 40–45 minutes until meat is 165°F.
    3. Pour remaining ¼ cup sauce over meatloaf 5 minutes before bake time is complete. Let stand 5 minutes; slice and serve.
