Barbecue Ham Sliders with Slaw

Ingredients

  • 1 lb sliced honey ham
  • ½ cup sliced banana pepper rings
  • 1 cup barbecue sauce
  • ¼ cup water
  • 1 (16 oz) package coleslaw mix
  • ½ cup Vidalia onion dressing
  • 1 (12 ct) package Hawaiian rolls
  • 12 slices cracker-cut Gouda (or Monterey Jack) cheese
  • ¾ cup crispy fried onions

Steps

    1. Cut ham to fit buns; drain banana pepper rings. Place ham slices in shallow, microwave-safe dish; add barbecue sauce and water. Cover and microwave on HIGH 2–3 minutes, stirring halfway through cook time, until 165°F.
    2. Meanwhile, combine coleslaw mix, banana pepper rings, and dressing; toss to coat.
    3. Slice rolls open for buns, if needed. Arrange bottom halves of buns on work surface; top each with ham, sauce, 1 slice cheese, ⅓ cup coleslaw, and 1 tablespoon fried onions. Complete sandwiches with top halves of buns. Serve with remaining coleslaw on the side.
