Barbecue Cowboy Burgers

Ingredients

  • 4 large (or 8 small) onion rings
  • 8 slices fully cooked bacon
  • 1 ⅓ lb ground beef (or 4 beef patties)
  • 2 teaspoons barbecue rub
  • Cooking spray
  • 4 slices sharp cheddar cheese
  • 4 slices white American cheese
  • ½ cup barbecue sauce
  • 4 hamburger buns
  • 1 cup lettuce shreds
  • 8 dill pickle sandwich slices
  • ¼ cup pickled sliced jalapeños

Steps

    1. Bake onion rings until crisp following package oven instructions. Microwave bacon until crisp following package instructions.
    2. Meanwhile, preheat grill (or grill pan) on medium-high. Form beef into 4 equal patties; coat with rub and cooking spray (wash hands). Place burgers on grill; cook 5–7 minutes on each side until grill-marked and 160°F. Top burgers evenly with cheeses and barbecue sauce during last minute of cook time.
    3. Toast buns if desired. Place lettuce and pickles on bottom halves of buns; top with burger patties, bacon, jalapeños, and onion rings. Crown with top buns. Serve.
