Grilled Dry-Rubbed Chicken Breasts with Tangy Barbecue Sauce

Ingredients

  • 1 ¾ lb boneless, skinless chicken breasts
  • 2 tablespoons barbecue rub
  • 2 limes, for zest/juice
  • 1 tablespoon apple cider vinegar
  • ½ cup sweet (or regular) barbecue sauce
  • Cooking spray

Steps

    1. Coat chicken with rub and place in shallow dish (wash hands); let stand 20 minutes (or chill overnight) to marinate.
    2. Zest 1 lime (1 teaspoon), then juice both limes (2 tablespoons). Whisk lime zest, lime juice, vinegar, and barbecue sauce until blended.
    3. Preheat grill (or grill pan) on medium-high. Coat chicken with spray. Arrange chicken on grill; cook 14–18 minutes, flipping occasionally, until 165°F. Baste chicken with sauce during last 2 minutes of cook time. Remove chicken from grill and let rest 5 minutes; slice and serve.

    Chef's Tip: This method can also be used with drumsticks, skin-on thighs, or chicken wings, cooking until skin is crisp and chicken is 165°F.
