Barbecue Beef and Potato Bowl

Ingredients

  • 2 tablespoons unsalted butter
  • 1 package sliced fresh peppers and onions (10–14 oz)
  • 1 (16 oz) package shredded barbecue beef (or pork)
  • ½ cup reduced-sodium beef broth (or stock)
  • 1 (24 oz) package country mashed potatoes
  • 4 oz pepper Jack (or cheddar) cheese
  • 6 tablespoons cooked bacon pieces
  • 6 tablespoons sliced green onions
  • 6 tablespoons French onion dip
  • ¾ cup french fried onions

Steps

    1. Preheat large sauté pan on medium-high 1–2 minutes. Melt butter in pan. Add peppers and onions; cook and stir 5–6 minutes until tender. Add meat and broth; cook and stir 2–3 minutes until mixture is combined and hot.
    2. Microwave potatoes following package instructions. Divide potatoes evenly among serving bowls. Shred cheese (about 1 cup).
    3. Divide beef mixture evenly on top of potatoes. Place piles of cheese, bacon, and green onions around beef. Top with dip and fried onions. Serve.
