Ingredients
- 3 ripe bananas
- ¼ cup all-purpose flour
- 2 tablespoons dark brown sugar
- 1 teaspoon lime juice
- 1 large egg
- ½ teaspoon kosher salt
- 1 teaspoon rum extract
- 1 tablespoon ground cinnamon
- 1 tablespoon granulated sugar
- ¼ cup vegetable oil
Steps
- Place in medium bowl: bananas (peeled), flour, brown sugar, lime juice, egg, salt, and rum extract; mash until smooth and combined. Combine cinnamon and sugar in second bowl.
- Preheat large, nonstick sauté pan on medium-high 2–3 minutes. Pour oil to pan, then scoop dough in rounded tablespoonfuls into pan; cook 2 minutes on each side or until golden brown. Toss fritters in cinnamon sugar. Serve.
