Ingredients
- ½ cup unsalted butter
- Cooking spray
- 4 medium, ripe bananas
- 2 cups all-purpose baking mix
- ½ cup semisweet chocolate morsels
- 1 ½ cups sugar
- 2 large eggs
- 1 cup low-fat plain Greek yogurt (or sour cream)
- 2 teaspoons vanilla extract
Steps
- Set butter out to soften. Preheat oven to 350°F. Coat 10- x 5- x 2-inch loaf pan with spray. Mash bananas (1 ½ cups). Combine baking mix and chocolate morsels; toss to coat.
- Beat butter and sugar with electric mixer until pale yellow. Reduce speed to low; add eggs, yogurt, vanilla, and bananas, mixing until well blended. Stir in dry mixture.
- Pour batter into pan, spreading evenly. Bake 60–65 minutes until browned and toothpick inserted in center comes out clean. Let stand 30 minutes to cool. Slice and serve.
