Ingredients
- 6 teaspoons olive oil, divided
- 4 sweet potatoes (about 1 lb total)
- ¼ teaspoon paprika
- ¼ teaspoon salt
Steps
- Preheat oven to 400°F. Brush baking sheet with 1 teaspoon olive oil. Peel potatoes and slice lengthwise into quarters.
- Combine paprika and remaining 5 teaspoons olive oil in large bowl. Add potato wedges and stir to coat.
- Arrange wedges on baking sheet; bake 35–40 minutes, flipping once halfway through bake time, until tender. Sprinkle with salt and serve.
Other Preparation Methods
- Microwave: Peel 1 lb sweet potatoes, cut into 2-inch pieces, and place in microwave-safe bowl. Add 2 tablespoons water and microwave on HIGH 7–8 minutes until tender.
- Grill: Cut 1 lb sweet potatoes into ¼-inch-thick slices and brush with oil. Grill over indirect heat 4–5 minutes on each side until tender.
