Baked Protein Pasta

Ingredients

  • 6 oz fresh (or frozen) broccoli florets (about 3 cups)
  • 2 cups shredded mozzarella cheese
  • 1 cup cottage cheese
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon roasted garlic-herb seasoning
  • 1 large egg (or ¼ cup egg substitute)
  • ¼ teaspoon crushed red pepper (optional)
  • 8 oz plant-based protein penne pasta
  • 1 jar marinara pasta sauce (24–26 oz)
  • 6 oz sliced smoked chicken sausage
  • Nonstick aluminum foil

Steps

    1. Bring water to a boil for pasta. Cut broccoli into bite-size pieces. Combine mozzarella, cottage cheese, Parmesan, egg, seasoning, and red pepper, if using. Set aside.
    2. Preheat oven to 375°F. Cook and drain pasta following package instructions.
    3. Combine pasta, sauce, sausage, and broccoli; spread mixture evenly in 13- x 9-inch baking dish. Dollop evenly with cheese mixture, cover dish with foil, and bake 20–25 minutes until broccoli is tender and mixture is 165°F. Remove foil and bake 5–6 more minutes until cheese is lightly browned. Serve.
