Ingredients
- 1 (12-inch) prepared, packaged pizza crust
- 1 tablespoon olive oil
- 2 cups shredded mozzarella cheese (8 ounces)
- 1⁄4 cup grated Parmesan cheese
- 4 slices cooked bacon, crumbled
- 4 eggs
- 1⁄4 cup fresh basil leaves, chopped
- 1 shallot, thinly sliced
- 1⁄4 teaspoon paprika
- ¼ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- 1 1⁄2 cups arugula
- 2 tablespoons balsamic vinaigrette
Steps
- Preheat oven to 375°F. Place pizza crust on a baking sheet and lightly brush the crust with olive oil. Sprinkle with mozzarella cheese and Parmesan cheese. Sprinkle with bacon.
- Crack eggs into a small bowl. Pour each egg onto top of pizza then sprinkle with basil and shallot. Top with the paprika, salt, and ground pepper.
- Bake 20–22 minutes, or until eggs are set and cheese is melted and golden brown.
- Combine arugula and balsamic vinaigrette in a small bowl. Top warm pizza with arugula salad then into wedges to serve.
