Ingredients
- Nonstick aluminum foil
- ½ orange, for zest/juice
- 1 clove garlic
- 4 (5 oz) salmon fillets, skin removed (about 1 ¼ lb)
- ½ teaspoon ground coriander
- ¼ teaspoon kosher salt
- 2 tablespoons chipotle hot sauce
Steps
- Place oven rack 4–6 inches from broiler; preheat broiler on HIGH. Line baking sheet with foil. Zest orange half (1 teaspoon), then juice (1 tablespoon). Chop garlic finely.
- Arrange salmon on baking sheet (wash hands). Combine coriander and salt; sprinkle over fish. Whisk garlic, orange zest, orange juice, and hot sauce until blended; reserve 1 tablespoon mixture.
- Brush salmon with remaining orange mixture and place under broiler. Broil 7–8 minutes until centers of fillets flake easily and are 145°F. Drizzle with reserved sauce. Serve.
