Baja-Style Chicken Tacos

Ingredients

  • 2 lb boneless, skinless chicken (such as breasts, fillets, or thighs)
  • 1 (11.4 oz) package hard and soft shell taco kit
  • 1 Hass avocado
  • 1 lime, for wedges
  • 1 (8 oz) can pineapple tidbits in juice
  • ½ cup canned diced tomatoes
  • ½ cup sour cream
  • ½ cup fresh salsa

Steps

    1. Preheat grill pan (or grill) on medium-high 2–3 minutes. Season chicken with taco seasoning from kit; wash hands. Place chicken in pan and cook 4–6 minutes on each side until 165°F.
    2. Meanwhile, heat taco shells and tortillas following package instructions. Halve avocado, remove pit and flesh, and slice flesh thinly; cut lime into wedges. Drain pineapples and tomatoes.
    3. Cut chicken into small pieces; combine with pineapples. Fill taco shells and tortillas evenly with chicken mixture, avocados, tomatoes, sour cream, salsa, and sauce from kit. Serve with lime wedges.
