Bacon-Cheddar Potato Kabobs

Ingredients

  • 18–24 baby potatoes (4–6 small potatoes per skewer)
  • 2 tablespoons water
  • 6 slices bacon
  • 6 (12-inch) skewers
  • ½ cup processed cheese sauce

Steps

    1. Preheat oven to 400°F. Place potatoes and water in microwave-safe bowl and cover; microwave on HIGH 7–8 minutes until potatoes are semi-tender, then drain.
    2. Thread end of 1 bacon slice onto sharp end of skewer. Add 1 potato, then wrap bacon around 1 side of potato and thread onto skewer again. Continue weaving bacon around potatoes, with bacon between each potato (wash hands).
    3. Arrange skewers on baking sheet; bake 15–18 minutes until bacon is crisp and potatoes are tender. Microwave cheese sauce on HIGH 1–2 minutes until hot; drizzle over skewers.
Other Preparation Methods
    • Grill: Preheat grill (or grill pan) on medium. Place 4 cups halved baby potatoes, ¼ cup melted garlic-herb butter, ⅓ cup grated Parmesan cheese, ½ teaspoon salt, and ¼ teaspoon pepper in foil pouch. Grill over indirect heat 15–20 minutes until potatoes are tender when pierced with a fork.
