Ingredients
- ¼ cup unsalted butter
- 6 slices fully cooked bacon
- 2 teaspoons fresh sage
- 2 teaspoons fresh thyme
- 1 teaspoon fresh rosemary
- 1 lemon, for zest
- 2 teaspoons minced garlic
- 2 teaspoons kosher salt, divided
- 1 teaspoon pepper, divided
- 1 whole turkey breast (5–6 lb)
Steps
- Preheat oven to 350°F. Cut butter into small pieces and place in medium bowl to soften. Microwave bacon following package instructions.
- Chop sage, thyme, and rosemary finely; add to bowl with butter. Zest lemon (1 teaspoon). Chop bacon. Add bacon, lemon zest, garlic, 1 teaspoon salt, and ½ teaspoon pepper to butter; stir until well blended.
- Place turkey in roasting pan. Loosen skin from turkey breast without detaching or tearing it. Spread butter mixture evenly under skin all over breast meat (wash hands).
- Sprinkle remaining 1 teaspoon salt and ½ teaspoon pepper over outside of turkey. Bake 1 ½–2 hours until turkey is 165°F. Remove turkey from oven and let stand 15 minutes; slice and serve.
