Roasted Bacon-Herb Turkey Breast

Ingredients

  • ¼ cup unsalted butter
  • 6 slices fully cooked bacon
  • 2 teaspoons fresh sage
  • 2 teaspoons fresh thyme
  • 1 teaspoon fresh rosemary
  • 1 lemon, for zest
  • 2 teaspoons minced garlic
  • 2 teaspoons kosher salt, divided
  • 1 teaspoon pepper, divided
  • 1 whole turkey breast (5–6 lb)

Steps

    1. Preheat oven to 350°F. Cut butter into small pieces and place in medium bowl to soften. Microwave bacon following package instructions.
    2. Chop sage, thyme, and rosemary finely; add to bowl with butter. Zest lemon (1 teaspoon). Chop bacon. Add bacon, lemon zest, garlic, 1 teaspoon salt, and ½ teaspoon pepper to butter; stir until well blended.
    3. Place turkey in roasting pan. Loosen skin from turkey breast without detaching or tearing it. Spread butter mixture evenly under skin all over breast meat (wash hands).
    4. Sprinkle remaining 1 teaspoon salt and ½ teaspoon pepper over outside of turkey. Bake 1 ½–2 hours until turkey is 165°F. Remove turkey from oven and let stand 15 minutes; slice and serve.
