Avocado Tomato Cucumber Salad

Ingredients

  • 1 cup cherry tomatoes
  • 1 medium tomato
  • ½ seedless cucumber
  • 1 small red onion
  • 1 Hass avocado
  • 2 tablespoons fresh basil
  • ½ teaspoon kosher salt
  • ½ teaspoon pepper
  • ¼ cup red wine vinaigrette

Steps

    1. Halve cherry tomatoes; slice yellow tomato, cucumber (1 cup), and onion (¼ cup) thinly. Halve avocado, remove pit and flesh, and slice thinly. Tear basil.
    2. Arrange vegetables on serving platter. Sprinkle with basil, salt, and pepper. Drizzle with dressing; serve.
