Avocado-Lime Shrimp Tacos

Ingredients

  • ¼ bunch fresh cilantro
  • ½ cup queso fresco (or feta cheese)
  • 2 limes, for juice
  • ½ cup creamy Caesar dressing
  • 1 Hass avocado
  • 1 small red onion
  • 1 (9.4 oz) package hard and soft taco kit
  • 2 tablespoons canola oil
  • 1 lb peeled/deveined large shrimp, tails removed
  • 16 oz salsa verde
  • 2 cups lettuce shreds

Steps

    1. Preheat oven to 325°F. Chop cilantro coarsely (¼ cup). Crumble cheese. Juice limes (2 tablespoons). Combine lime juice and dressing until blended; set aside. Halve avocado, scoop out flesh, and slice thinly; slice red onion thinly. Warm taco shells and tortillas following package instructions.
    2. Preheat large sauté pan on medium-high 2–3 minutes. Place oil in pan; swirl to coat. Add shrimp (wash hands) and cook 1 minute. Reduce heat to medium-low. Add salsa verde; cook 2–3 minutes, stirring often, until shrimp are pink and opaque. Remove from heat.
    3. Divide among taco shells and tortillas: shrimp mixture, cheese, avocado, onions, cilantro, and lettuce shreds; drizzle with dressing. Serve.
