Asparagus Salad Supreme

Ingredients

  • 1 lb fresh asparagus
  • 1 shallot
  • 2 hard-boiled eggs
  • ¼ cup cooked bacon pieces
  • 2 tablespoons capers
  • ⅓ cup diced fresh tomato
  • 3 tablespoons Caesar dressing
  • 3 tablespoons grated Parmesan (or pecorino) cheese (optional)

Steps

    1. Remove root ends from asparagus. Place in microwave-safe dish in even layer; microwave on HIGH 2–3 minutes or until tender. Chill for 10 minutes (asparagus can be served warm).
    2. Finely chop shallot; peel and grate eggs. Place asparagus in a row on serving platter. Create individual rows down the center of the asparagus with shallots, eggs, bacon, capers, and tomatoes. Drizzle with dressing and sprinkle with cheese (if using). Serve.
