Asian-Style Turkey and Green Bean Sauté

Ingredients

  • 12 oz trimmed fresh green beans
  • ½-inch piece fresh ginger
  • 1 (10 oz) bag frozen brown rice
  • 1 tablespoon sesame oil
  • 3 oz sliced fresh green onions
  • 1 lb lean ground turkey (or ground turkey breast)
  • 3 tablespoons chili-garlic sauce
  • 3 tablespoons hoisin sauce
  • 1 tablespoon reduced-sodium soy sauce
  • 1 tablespoon rice vinegar

Steps

    1. Place green beans in microwave-safe dish and microwave on HIGH 3 minutes. Peel and grate ginger (1 teaspoon).
    2. Prepare rice following package instructions. Preheat large sauté pan on medium-high 2–3 minutes. Place oil and onions in pan; cook and stir 1 minute. Add turkey; cook 4–5 minutes, stirring to crumble meat, until no pink remains and turkey is 165°F.
    3. Reduce heat to low. Stir in chili-garlic sauce, hoisin sauce, ginger, and green beans; simmer 2–3 minutes until sauce thickens and beans are tender. Stir in soy sauce and vinegar; cook 1 minute. Serve turkey mixture over rice.
