Ingredients
- ½ cup frozen, shelled edamame
- 1 medium red bell pepper
- 1 medium orange bell pepper
- 1 medium yellow bell pepper
- ¼ head Napa cabbage
- 1 cup fresh spinach
- ½ cup refrigerated ginger dressing
- 1 tablespoon toasted sesame seeds (optional)
Steps
- Cook edamame following package instructions, then chill.
- Slice peppers (1 cup each), cabbage (2 ½ cups), and spinach thinly. Place cabbage, peppers, spinach, and edamame in large bowl; toss to combine.
- Drizzle dressing over vegetables; toss to combine. Cover and chill 1 hour before serving. Sprinkle with sesame seeds, if using. Serve.
