Ingredients
- 6 cloves garlic, divided
- 1 tablespoon fresh ginger root
- 3 green onions
- 1 medium red bell pepper
- 2 limes, for juice
- 4 oz whole wheat spaghetti pasta (or soba noodles)
- 2 tablespoons sesame oil, divided
- ¼ teaspoon crushed red pepper
- 1 (12 oz) bag broccoli slaw
- 2 tablespoons reduced-sodium soy sauce
- 2 tablespoons mirin wine
- 1 tablespoon toasted sesame seeds (optional)
Steps
- Bring large pot of water to boil for pasta. Chop garlic (3 teaspoons) and ginger finely. Slice onions thinly (½ cup); cut bell pepper into thin strips. Juice lime (2 tablespoons). Cook pasta according to package instructions, then drain and chill 10 minutes.
- Combine in large sauté pan: 2 teaspoons garlic, ginger, 1 tablespoon sesame oil, green onions, and red pepper flakes until blended. Sauté 2–3 minutes, over medium-low, stirring frequently, until golden.
- Add broccoli slaw and bell peppers to pan; cook 1–2 minutes, stirring frequently, until softened. Remove pan from heat.
- Combine in small bowl: soy sauce, mirin, lime juice, and remaining 1 tablespoon sesame oil and 1 teaspoon garlic. Add pasta, soy mixture, and broccoli mixture to large bowl and toss to coat. Serve garnished with sesame seeds, if using.
