Ingredients

  • 1 cup GreenWise low-sodium garbanzo beans (chickpeas), drained
  • 1 cup sliced beets, drained
  • 3 cups GreenWise baby arugula
  • 3 cups GreenWise baby spinach
  • ½ cup pine nuts
  • ¼ cup mayonnaise
  • ¼ cup olive oil
  • 2 tablespoons white distilled vinegar
  • 1 teaspoon sugar
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ½ teaspoon pepper

Steps

    1. Drain beans and beets. Combine in large bowl: arugula, spinach, beets, chickpeas, and pine nuts.
    2. Combine remaining ingredients in small bowl. Pour dressing over salad; toss and serve.
