Ingredients
- 1 cup GreenWise low-sodium garbanzo beans (chickpeas), drained
- 1 cup sliced beets, drained
- 3 cups GreenWise baby arugula
- 3 cups GreenWise baby spinach
- ½ cup pine nuts
- ¼ cup mayonnaise
- ¼ cup olive oil
- 2 tablespoons white distilled vinegar
- 1 teaspoon sugar
- ½ teaspoon garlic powder
- ½ teaspoon kosher salt
- ½ teaspoon pepper
Steps
- Drain beans and beets. Combine in large bowl: arugula, spinach, beets, chickpeas, and pine nuts.
- Combine remaining ingredients in small bowl. Pour dressing over salad; toss and serve.
