Arctic Char with Orange Hollandaise

Ingredients

  • 1 orange, for zest
  • 1 cup reduced-fat milk
  • 1 (0.9 oz) packet hollandaise sauce mix
  • ¼ cup unsalted butter
  • ½ teaspoon chipotle hot sauce
  • ½ teaspoon kosher salt
  • 2 tablespoons canola oil
  • 2 (8 oz) Arctic char fillets, skin removed (about 1 lb)

Steps

    1. Zest orange (1 teaspoon). Whisk milk and hollandaise mix in microwave-safe bowl until smooth. Add butter; microwave on HIGH 4–5 minutes, stirring often, until sauce thickens. Stir in orange zest and hot sauce.
    2. Preheat large sauté pan on medium-high 2–3 minutes. Season fish with salt (wash hands). Place oil in pan, then add fish; cook 3–4 minutes on each side until centers of fillets flake easily and are 145°F. Serve with sauce.
Other Preparation Methods

    Broil
    Place oven rack 6 inches from heat source and preheat broiler on HIGH; line baking sheet with nonstick foil. Place 2 (8 oz) Arctic char fillets, skin removed (about 1 lb) on baking sheet (wash hands). Broil 4–5 minutes until centers of fillets flake easily and are 145°F. Spread 2 tablespoons basil pesto evenly over top of fish.

    Bake
    Preheat oven to 425°F. Place 2 (8 oz) Arctic char fillets, skin removed (about 1 lb) in baking dish (wash hands); spread 2 tablespoons teriyaki sauce evenly over top of fish. Bake 10–12 minutes until centers of fillets flake easily and are 145°F.
