Steps

    1. Preheat oven to 375°F. Coat baking sheet with spray. Season pork with ¼ teaspoon each salt and pepper, then place on baking sheet (wash hands). Bake 20–22 minutes, flipping halfway through cook time, and until 145°F. Remove pork from oven and let stand 5 minutes to rest before slicing.
    2. Stir into medium microwave-safe bowl: quinoa rice blend, squash & zucchini, bell peppers, ½ tablespoon butter, and ¼ teaspoon each salt and pepper. Cover and microwave on HIGH for 2 minutes, then carefully remove from microwave and let stand until pork is complete.
    3. Transfer maple mustard sauce to small microwave-safe bowl; add ¼ cup water and stir to combine. Cover and microwave on HIGH for 1–2 minutes or until heated through.
    4. Slice pork, then top with maple mustard sauce and serve with quinoa rice blend and vegetables.
