Steps
- Preheat oven to 375°F. Coat baking sheet with spray. Season pork with ¼ teaspoon each salt and pepper, then place on baking sheet (wash hands). Bake 20–22 minutes, flipping halfway through cook time, and until 145°F. Remove pork from oven and let stand 5 minutes to rest before slicing.
- Stir into medium microwave-safe bowl: quinoa rice blend, squash & zucchini, bell peppers, ½ tablespoon butter, and ¼ teaspoon each salt and pepper. Cover and microwave on HIGH for 2 minutes, then carefully remove from microwave and let stand until pork is complete.
- Transfer maple mustard sauce to small microwave-safe bowl; add ¼ cup water and stir to combine. Cover and microwave on HIGH for 1–2 minutes or until heated through.
- Slice pork, then top with maple mustard sauce and serve with quinoa rice blend and vegetables.
