Steps
- Remove pork from package and pat dry with a paper towel; season with ½ teaspoon each salt and pepper (wash hands). Preheat medium, nonstick sauté pan on medium-high 2–3 minutes. Pour ½ tablespoon oil in pan, then add pork; cook 2–3 minutes on each side or until golden brown and 145°F. Remove pork from pan and cover to keep warm.
- Add to same pan: ½ tablespoon oil, one-half of the green onions and garlic, and ¼ teaspoon each salt and pepper; cook and stir 1 minute. Add Asian Rice blend; cook 3–4 minutes, stirring frequently, or until rice is hot. Remove rice from pan and cover to keep warm.
- Pour 2 teaspoons oil in same pan, then add bok choy and remaining-half garlic; cook and stir 3–4 minutes or until bok choy has softened slightly. Remove pan from heat.
- Divide rice between 2 serving plates; top with even amounts bok choy and pork. Drizzle dressing over each plate; garnish with remaining-half green onions.
