Steps
- Preheat large, nonstick sauté pan on medium-high 2–3 minutes. Pour 1 ½ tablespoons oil in pan, then add chicken; cook 2–3 minutes on each side or until chicken begins to brown.
- Add bell peppers to pan; cook 5–6 minutes, flipping chicken as needed, and until chicken is 165°F. Remove chicken from pan; let stand 5 minutes to rest before slicing.
- Reduce heat to low. Add to peppers: ½ cup water, pomodoro sauce, gnocchi, and ¼ teaspoon each salt and pepper; cover and cook 4–5 minutes.
- Slice chicken and return to pan; cook and stir 1–2 more minutes or until hot. Serve.
