Ingredients
- 1 cup unsalted butter
- 8 oz cream cheese
- 2 cups all-purpose flour (+ more for dusting)
- ¼ cup sour cream
- 1 teaspoon vanilla extract
- ¼ teaspoon kosher salt
- ¼ cup + 10 tablespoons granulated sugar, divided
- Plastic wrap
- 8 oz dried apricots
- ¼ cup apricot preserves
- 1 cup Marcona (or whole) almonds
- ¼ cup brown sugar
- 1 large egg
- 1 tablespoon water
- 1 teaspoon ground cinnamon
- Parchment paper
Steps
- Cut butter and cream cheese into small pieces. Place in bowl of food processor: butter, cream cheese, flour, sour cream, vanilla, salt, and ¼ cup granulated sugar. Pulse until combined and crumbly.
- Transfer dough to floured work surface and roll into ball. Divide ball into 4 equal portions and flatten into discs. Wrap individually in plastic wrap and chill 1 hour.
- Meanwhile, place in clean bowl of food processor: dried apricots, preserves, almonds, brown sugar, and 6 tablespoons granulated sugar. Process until finely chopped and combined.
- Whisk egg and water until blended. Combine cinnamon and remaining 4 tablespoons granulated sugar in small bowl.
- Preheat oven to 350°F. Line 2 baking sheets with parchment paper. Roll dough discs into 10-inch circles (uneven or cracked edges are fine). Place 9-inch pie pan upside-down on each and cut around edge to form 9-inch circles.
- Spread ½ cup apricot filling on each dough circle, leaving 1-inch border, then cut into 8 equal wedges. Roll each wedge tightly from wide end to tip. Arrange rugelach on prepared baking sheets. Brush with egg wash and dust with cinnamon sugar; chill 20 minutes.
- Bake 20–25 minutes until golden. Transfer to wire rack and let cool 10 minutes; serve.
