Apple Strudel with Puff Pastry
12 servings
1 hour, 40 minutes total (Active 40 minutes)

Ingredients

  • 1 sheet frozen puff pastry
  • 3 large, sweet apples
  • ½ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 3 tablespoons cornstarch
  • ¼ teaspoon kosher salt
  • 1 cup apple juice (or cider)
  • 1 ½ teaspoons vanilla extract, divided
  • Parchment paper
  • ½ cup whipped cream cheese
  • ½ cup chopped walnuts
  • 1 large egg
  • 1 tablespoon water
  • ½ cup powdered sugar
  • 2 tablespoons whole milk
  • Vanilla ice cream (optional for serving)

Steps

    1. Thaw puff pastry. Peel and core apples, then cut into ½-inch cubes (about 3 cups).
    2. Combine apples, sugar, cinnamon, cornstarch, salt, apple juice, and 1 teaspoon vanilla in Dutch oven (or large, heavy-bottom saucepan) on medium-low. Bring to a simmer, then cook 6–8 minutes, stirring occasionally, until apples are tender and sauce has thickened. Remove and let stand to cool.
    3. Preheat oven to 425°F. Line baking sheet with parchment paper. Roll puff pastry out to 14- x 10-inch rectangle, then place on baking sheet, short end facing you, and spread cream cheese down center of pastry.
    4. Spoon apple mixture on top of cream cheese, then sprinkle with walnuts. Fold short ends of pastry over filling. Starting 1 inch away from sides of filling, cut 1-inch-wide strips toward long sides of pastry. Alternate folding strips from each side over filling, tucking and pinching to seal.
    5. Whisk egg and water until combined; brush top of pastry with egg wash. Bake 20–25 minutes until filling is bubbly and pastry is golden, then remove from oven and let stand to cool 30 minutes.
    6. Meanwhile, whisk powdered sugar, milk, and remaining ½ teaspoon vanilla until thick glaze forms. Drizzle strudel with glaze and slice. Serve with ice cream, if using.
Chef's Tip: Try adding ¼ cup raisins or dried cranberries to apple filling for another flavor note.

Do not eat raw dough/batter.
