Ingredients

  • 1 frozen puff pastry sheet
  • Parchment paper
  • 1 large tart (or crisp, sweet) apple
  • 1 large firm, ripe pear
  • 1 lemon, for juice
  • All-purpose flour, for dusting
  • 1 large egg
  • ¼ cup almond flour
  • ½ teaspoon ground cinnamon
  • 1 tablespoon brown sugar
  • 1 tablespoon granulated sugar
  • ¼ teaspoon kosher salt
  • Whipped cream (optional, for serving)

Steps

    1. Thaw puff pastry. Preheat oven to 400°F. Line baking sheet with parchment paper.
    2. Peel apple and pear if desired, then core and cut into ¼-inch-thick slices. Juice lemon (2 tablespoons). Place fruit slices in bowl, drizzle with lemon juice, and toss to coat.
    3. Dust work surface lightly with flour. Roll pastry into 13- x 9-inch rectangle and place on baking sheet. Beat egg and brush over pastry. Prick pastry with fork, then fold over edges to form ½-inch border, pressing down gently with fork to create decorative edge. Brush border with egg.
    4. Combine almond flour and cinnamon; sprinkle mixture evenly over pastry. Arrange fruit slices in single layer over pastry, overlapping slightly. Sprinkle fruit evenly with brown sugar, granulated sugar, and salt.
    5. Bake 25–35 minutes until pastry is golden and fruit is tender. Remove from oven and let stand 10 minutes on baking sheet before removing and cooling completely on wire rack. Slice and serve with whipped cream, if using.
