Apple Matzo Kugel

Ingredients

  • 5 tablespoons unsalted butter (or margarine), divided
  • 4 thin, unsalted matzo crackers
  • 4 cups warm water
  • 3 large Fuji apples
  • 3 large eggs
  • ½ teaspoon kosher salt
  • ½ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ cup chopped walnuts
  • ½ cup raisins
  • Cooking spray

Steps

    1. Preheat oven to 350°F. Melt 4 tablespoons butter; cut remaining 1 tablespoon into small cubes.
    2. Break matzo into 1-inch pieces and soak in water 1 minute or until softened. Drain matzo, but do not squeeze dry; place in large bowl. Peel apples and chop finely (about 4 cups); place in bowl with matzo.
    3. Place eggs, salt, sugar, melted butter, and cinnamon in separate bowl; whisk to blend. Stir egg mixture into matzo mixture, then stir in walnuts and raisins.
    4. Coat 8-inch square baking dish with spray. Pour matzo mixture into dish and spread evenly. Dot top with cubed butter. Bake 40–45 minutes until top is golden, apples are tender, and center is 160°F. Let stand 10 minutes to cool. Serve.
