Apple-Crunch Jackfruit Bowl

Ingredients

  • 1 (10 oz) package shredded barbecue jackfruit
  • 1 crisp, sweet apple
  • ½ cup shelled pistachios
  • 4 oz fresh zucchini spirals
  • 10 dried figs
  • 1 package fresh baby spinach (4–6 oz)
  • ½ cup lemon vinaigrette
  • 1 (3.4 oz) bag dried apple chips

Steps

    1. Prepare jackfruit following package stovetop or microwave instructions. Chop apple (1 cup), pistachios, and spirals (1 cup). Remove stems from figs and slice (1 cup).
    2. Divide spinach among serving bowls; top with jackfruit, apples, pistachios, figs, and spirals in individual piles.
    3. Drizzle each bowl evenly with vinaigrette and top with apple chips; serve.
