Ingredients
- 1 (10 oz) package shredded barbecue jackfruit
- 1 crisp, sweet apple
- ½ cup shelled pistachios
- 4 oz fresh zucchini spirals
- 10 dried figs
- 1 package fresh baby spinach (4–6 oz)
- ½ cup lemon vinaigrette
- 1 (3.4 oz) bag dried apple chips
Steps
- Prepare jackfruit following package stovetop or microwave instructions. Chop apple (1 cup), pistachios, and spirals (1 cup). Remove stems from figs and slice (1 cup).
- Divide spinach among serving bowls; top with jackfruit, apples, pistachios, figs, and spirals in individual piles.
- Drizzle each bowl evenly with vinaigrette and top with apple chips; serve.
