Apple Butter Snickerdoodles

Ingredients

  • Parchment paper
  • 2 ¾ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • 3 teaspoons ground cinnamon, divided
  • ⅓ cup grapeseed (or vegetable) oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 6 tablespoons brown sugar
  • 2 tablespoons apple butter

Steps

    1. Preheat oven to 350°F. Line baking sheet with parchment. Combine in medium bowl: flour, granulated sugar, baking powder, salt, and 1 teaspoon cinnamon.
    2. Combine oil, eggs, and vanilla in large bowl; beat with electric mixer until blended. Stir flour mixture into oil mixture (in batches) until dough forms. Cover dough and chill 30 minutes.
    3. Combine brown sugar and remaining 2 teaspoons cinnamon in shallow dish. Scoop (or form) dough into 24 (1-inch) balls. Flatten balls into discs (about 2 inches). Place about ¼ teaspoon apple butter in center of each disc. Roll dough carefully around filling to form a ball.
    4. Dip dough balls into brown sugar mixture and arrange on baking sheet. Bake 10–12 minutes until edges begin to brown and centers are set. Cool on sheet 5 minutes before placing on wire rack to cool completely; serve.
    Note: Keep dough chilled between batches so it's easier to work with.
