Ingredients

For crust
  • 1 cup unsalted butter
  • Cooking spray
  • Parchment paper
  • ¾ cup granulated sugar
  • 1 tablespoon vanilla paste (or extract)
  • 2 ½ cups all-purpose flour
  • ¼ teaspoon kosher salt
For filling
  • ½ cup unsalted butter
  • 2 teaspoons vanilla paste (or extract)
  • ¼ teaspoon almond extract
  • 1 cup granulated sugar
  • 2 large eggs
  • ¼ teaspoon kosher salt
  • 2 cups almond flour
  • 1 tablespoon all-purpose flour
For topping
  • 1 cup sliced almonds
  • 1 tablespoon powdered sugar (optional)

Steps

    1. Prepare crust. Soften butter. Preheat oven to 350°F. Coat 9-inch square baking dish with spray and line with parchment.
    2. Place butter, sugar, and vanilla in large bowl; beat with electric mixer on MEDIUM until smooth and fluffy. Add flour and salt; beat just until blended and dough forms. Press two-thirds dough evenly into baking dish; chill 15 minutes.
    3. Prepare filling. Soften butter. Place butter, vanilla, almond extract, sugar, and eggs in second large bowl; beat with electric mixer on MEDIUM until well blended. Add salt, almond flour, and all-purpose flour; mix until blended into creamy paste.
    4. Bake crust 15 minutes; remove from oven and let stand to cool 15 minutes.
    5. Spread filling mixture evenly over crust, crumble remaining one-third dough over filling, and top with sliced almonds. Bake 35–40 minutes until edges are browned and center is set. Let stand to cool 30 minutes in dish, then remove from dish and let stand to cool 1 hour. Dust with powdered sugar, if using. Cut into bars and serve.

    Chef's Tip: To soften cold butter, microwave in 30-second intervals until just soft enough to press your finger gently into, on average about 10 seconds per tablespoon.
