Air Fryer Pizza Empanadas

Ingredients

  • 20 frozen empanada discs
  • 8 oz mozzarella cheese
  • 4 oz sliced pepperoni
  • ¼ cup sliced black olives
  • ½ cup tri-pepper mix (diced fresh green, red, and yellow bell peppers)
  • 1 teaspoon dried Italian seasoning
  • 1 large egg (or ¼ cup egg substitute)
  • 1 tablespoon water
  • Nonstick aluminum foil
  • Cooking spray
  • 1 jar pizza sauce (12–15 oz)
  • 1 Caesar salad kit (optional for serving)

Steps

    1. Thaw empanada discs. Shred cheese (2 cups) and chop pepperoni (1 cup); combine in medium bowl. Drain olives.
    2. Add olives, tr-pepper mix, and Italian seasoning to bowl with cheese mixture; toss to blend. Whisk egg and water in small bowl until well blended.
    3. Preheat air fryer to 400°F. Line baking sheet (or basket) with foil (or parchment paper). Arrange empanada discs on clean work surface and brush edges with egg mixture. Place about 2 tablespoons filling mixture on 1 side of disc, then fold dough over filling and crimp with fork to seal. Repeat with remaining discs and filling.
    4. Arrange empanadas ½ inch apart on baking sheet, in batches if needed, and coat with spray. Cook 5 minutes, then flip and cook 2–3 more minutes until golden and crispy.
    5. Heat pizza sauce following package instructions. Prepare salad kit, if using. Serve empanadas with sauce on the side for dipping.
    Chef's Tip: Empanadas can be baked at 400°F for 10–12 minutes until golden, flipping halfway through cook time.
