Aguacate Relleno (Crab-Stuffed Avocado)

Ingredients

  • ½ fresh jalapeño pepper
  • 5 limes, for juice
  • 4 ripe Hass avocados
  • 1 lb lump crabmeat
  • ½ cup trinity mix (diced fresh onions, bell peppers, and celery)
  • ½ teaspoon kosher salt
  • ½ teaspoon pepper
  • ½ cup reduced-fat mayonnaise
  • 1 tablespoon chili-lime seasoning

Steps

    1. Chop jalapeño finely, removing membranes and seeds if desired. Juice limes (5 tablespoons). Cut avocados in half; remove and discard pits. Coat cut sides of avocados with 2 tablespoons lime juice.
    2. Drain crabmeat. Combine in medium bowl: crabmeat, trinity mix, salt, pepper, mayonnaise, jalapeños, and remaining 3 tablespoons lime juice until blended.
    3. Divide crab mixture evenly among avocado halves; sprinkle with seasoning. Serve.
