Total Time: 30 minutes
- 1 Tbsp diced jalapeño peppers
- 1 medium red onion
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 lb top sirloin fillets
- 8 oz seasoned french fries (1/4 of 32-oz bag)
- 1/4 cup red wine vinegar
- 2 Tbsp reduced-sodium soy sauce
- 2 trays sirloin and fries
- 1 clamshell cups/lids
- 2 bags cilantro and onion
- 5 cups garlic, jalap, vinegar, sauce, spices
- 5 lids garlic, jalap, vinegar, sauce, spices
- 3 cloves fresh garlic
- 2 Tbls (1/5 bunch) fresh cilantro
- 1. Preheat oven to 425°F. Slice onion thinly; chop garlic and cilantro. Slice beef into thin strips, across the grain, and place in zip-top bag (wash hands).
2. Combine vinegar, soy sauce, and spice blend; add to beef and let stand 15 minutes to marinate. Meanwhile, bake fries 15–18 minutes, turning halfway through cook time, or until crispy.
3. Preheat large, nonstick sauté pan on medium-high 2–3 minutes. Place oil in pan, then add onions and garlic; cook 4–5 minutes or until onions begin to soften.
4. Add beef (discarding marinade), jalapeños, and cilantro; cook and stir 3–4 minutes until no pink remains and beef is 145°F. Transfer steak mixture to serving platter; top with cooked fries.
