It can be traced to the Cormantee hunters of preslavery West Africa. They would roast pork over hot coals in earthen pits that were covered with patas, strands made of green pimento or other green tree branches. In Boston Beach (an area of northeastern Jamaica) today, the jerked pork is famous. Www.jcskitchen.com. Product of Jamaica.
