Microwave: place 1 cup peeled carrots and 2 tablespoons water in a microwave-safe dish. Cover and microwave on high for 3 minutes. Steam: Steam carrots, covered, over boiling water 8-12 minutes or until tender. Keep refrigerated. If your carrots appear slightly dry, rinse with cold water for about a minute.
