Shrimp & Veggie Tempura: Prep Time: 10 min; Cook Time: 10-15 min; Servings: 4-6. Shopping List: Vegetable oil, for frying; Up to 2 lbs uncooked shrimp (peeled and deveined) and/or fresh vegetables; 1 4 cups ice cold seltzer water. Prep (Bring veggies to room temperature before battering.) 1. Heat at least 2 inches of oil in a deep skillet or wok. 2. Use paper towels to pat the shrimp and vegetables completely dry. 3. In a medium bowl, whisk together the entire packet of tempura mix with the seltzer water (do not overmix). Place the bowl into a larger bowl filled with ice cubes to keep cold. Cook (to internal temperature of 145°F for shrimp) 1. When the oil reaches 350°F-360°F, dip 5-6 pieces of shrimp or vegetables into tempura batter, allow excess liquid to drain, and quickly slip them into the hot oil. Fry for 2-4 min., until golden and cooked. Use a spider or tongs to transfer to a paper towel-lined plate. Skim off bits of cooked batter from the oil between batches. 2. Allow the oil to return to temperature and repeat with remaining ingredients. Serve immediately, with lemon wedges, soy sauce, or your favorite dipping sauce.
