Chimichurri Skirt Steak with Potatoes, Asparagus, Peppers & Onions

  • 1 lb chimichurri skirt steak
  • 1/2 lb fresh asparagus, peppers, and onions blend
  • 1/2 teaspoon roasted garlic-herb seasoning
  • 12 oz mashed potatoes
  • 1. Preheat broiler on HIGH. Place steak on foil-lined baking sheet (wash hands) and broil 4–6 inches from heat for 13 minutes, turning over once halfway through cook time.
    2. Place vegetable blend around steak; broil 4–6 inches from heat for 8–10 minutes until steak is 125°F (for medium rare; warm red center), 130°F (for medium; warm pink center), or up to 170°F (for well done). Sprinkle with seasoning.
    3. Let steak stand 5 minutes to rest, then slice diagonally against the grain. Meanwhile, remove cardboard overwrap from potatoes. Peel back corners or cut small slits in film to vent. Microwave on HIGH 1 minute. Stir and continue cooking for an additional 30–40 seconds; let stand 2 minutes before serving.

    NOTE: The doneness temperatures for medium rare and medium stated above are traditional temperatures used for cooking steaks, but are not recommended by the USDA. To maintain food safety, the USDA recommends an internal temperature of 145°F, as measured using a food thermometer, with a 3-minute rest time before carving.
