You will need: 1 bag of Bloomfield Farms Cornbread & Muffin Mix, 1-1/2 cups water, 3 large eggs (or egg substitute). Mix it up! Try adding 1-1/4 cup drained whole kernel corn or 1/2 cup chopped jalapeños for a fun twist on the original recipe! Corn Muffin Directions 1. Preheat oven to 400 degrees F. 2. Lightly grease muffin tin with non-stick cooking spray. 3. In a mixing bowl, whisk water and eggs until smooth. 4. Place Bloomfield Farms Cornbread & Muffin Mix in a separate bowl and slowly add egg mixture from Step 3. 5. Gently hand mix with a spoon or spatula. Do not over-mix. 6. Spoon batter into muffin tin, making sure each tin is 3/4 full. Tap pan on counter to level muffin batter. 7. Place tin on middle rack in oven and bake for 15 - 20 minutes. 9"x 9"x2" Square Pan: Lightly grease pan with non-stick cooking spray. Prepare ingredients as directed above. Bake for 25 - 30 minutes on middle rack in oven. You will need: 1 bag of Bloomfield Farms Cornbread & Muffin Mix. 3/4 cup water. 1 large egg (or egg substitute). Fried Cornbread Directions 1. Lightly oil skillet or griddle with corn oil and preheat to 375 degrees F (medium temperature). 2. In a mixing bowl, whisk water and egg until smooth. 3. Place Bloomfield Farms Cornbread & Muffin Mix in a separate bowl and slowly add egg mixture from Step 2. 4. Gently hand mix with a spoon or spatula. Do not over-mix. 5. Using a large tablespoon or ladle, place batter in heated skillet and fry approximately 2 minutes per side or until done.
