Made from pure jersey cow milk. Made with 100% natural local whole jersey cow milk. Original family farm recipe. We use milk that comes from Jersey cows cared for by our neighbor. The cows graze the pastures and eat silage made from rye, clover, and natural grasses found growing on the farm. These cows provide the freshest, richest, and most delicious milk you can imagine. We culture the whole milk in small batches and allow the correct acidity to develop naturally over many hours before the final heating. Once the batch has formed perfect curds, we dip each by hand into these small baskets to drain, disturbing them as little as possible to maintain their moist and tender body.
