Simplified Beef Mole with Beans and Rutabagas

Cooking Sequence

-- Prepare mole recipe - 15 minutes

-- Slow cook mole - up to 2 hours

-- Prepare bean recipe; serve - 10 minutes

Simplified Beef Mole


2 1/2 lb boneless chuck roast

1/2 teaspoon kosher salt

1/4 teaspoon pepper

1 tablespoon canola oil

1 (16-oz) container fresh salsa

1 (10-oz) can enchilada sauce

1/2 cup hot chocolate mix

1 1/2 teaspoons ground cinnamon

1 tablespoon chipotle pepper sauce


-- Cut beef into bite-size pieces.


1. Preheat large sauté pan on medium-high 2-3 minutes. Season meat with salt and pepper (wash hands). Place oil in pan, then add meat (in batches, if needed); cook and stir 1-2 minutes or until well browned.

2. Combine meat and remaining ingredients; place in slow cooker. Cook on HIGH 1 1/2-2 hours (or LOW 2 1/2-3 hours) until meat is tender. Serve over rice, if desired. (Makes 6 servings.)

Beans and Rutabagas


2 tablespoons culantro, coarsely chopped

1 (16-oz) can reduced-sodium pinto beans, drained

1 (14.5-oz) can diced rutabagas, drained

1/2 cup salsa verde

1/2 teaspoon complete (or total) seasoning


-- Chop culantro.


1. Combine all ingredients in medium saucepan on medium heat.

2. Cook and stir 4-5 minutes or until thoroughly heated. Serve.

-- Traditional mole often uses 20 ingredients and requires most of the day to prepare. Our simplified beef mole has only 9 ingredients and can be completed in about 2 hours!
