Cooking Sequence

  • Prepare salad recipe through step 1; begin to chill pasta (20 minutes)
  • Preheat grill; prepare burgers and begin to grill (10 minutes)
  • Complete salad and burgers; serve (15 minutes)

Pepper and Onion Cheeseburgers

Ingredients

1/2 cup roasted red peppers, coarsely chopped
2 cups 3-color coleslaw mix
1/4 cup lemon vinaigrette
1/2 teaspoon kosher salt
1 1/2 lb ground beef chuck
1 cup shredded Cheddar cheese
1/2 cup french-fried onions
Cooking spray
1/2 cup sweet and spicy barbecue sauce
4 hamburger buns

Prep

  • Preheat grill (or grill pan).
  • Chop peppers.

Steps

  1. Combine slaw, vinaigrette, and salt until blended; set aside.
  2. Combine ground beef, cheese, french-fried onions, and peppers until blended. Form meat into four patties (wash hands). Coat patties on both sides with spray and place on grill; grill 4–5 minutes on each side and until burgers are 160°F.
  3. Spread 2 tablespoons barbecue sauce on inside of bun halves. Place burgers on bottom halves of buns; top each with 1/2 cup slaw. Assemble burgers and serve.

Summer Pasta Salad

Ingredients

3 cups cantaloupe (or honeydew) chunks (1 lb)
1 ripe Hass avocado, coarsely chopped
8 oz rotini pasta
1/3 cup lemon vinaigrette
1/2 teaspoon kosher salt
1/3 cup fresh basil, coarsely chopped
2 cups shredded mozzarella cheese

Prep

  • Bring water to a boil for pasta.
  • Cut melon and avocado into small bite-size pieces.

Steps

  1. Combine melon, avocado, vinaigrette, and salt in salad bowl, stirring gently to coat evenly.
  2. Cook and drain pasta following package instructions. Chill pasta in refrigerator for 5 minutes to cool.
  3. Chop basil. Stir pasta and cheese into melon mixture, then sprinkle with basil. Chill until ready to serve. (Makes 6 servings.)

Aprons Advice

  • Complete your meal with french fries, fresh salad blend, and apple pie for dessert.
  • For a kid-friendly version of the burger, just replace the slaw and barbecue sauce with sour cream and salsa.
